Ok just did this and it worked for me removing my gmail account from my YouTube account.
1. Delete your YouTube account, yes thats right Delete it...
2. When you have done this you then need to reactivate it... Go here, http://help.youtube.com/
3. Put in the OLD details, old username and email associated with the account. You should then receive a couple of emails.
4. Read the emails one is to say they reinstated your account and the other is to reset your password... Now I know what you're thinking this isn't what you want.... Shhhhhhh relax it is!
5. Click the reset password link and go through the motions of sorting your account, you'll be asked to Link to your Gmail account, READ BELOW it says to "SKIP" this part.... SKIP IT...
6. You should now be asked to fill in your new details, as in your NEW Email address as your account is no longer connected to your gmail ;)
